During his studies, Klaus Brønd Laursen studied how Value-Based-Food-Chains manages to maintain their values during periods of growth. The dissertation explores the question: how do value-based-food-chains maintain a coherence strong enough to secure the mediation of non-economic values central to their internal constitution when they experience periods of growth? The overall argument is that combining values and volumes are more likely to succeed when the involved businesses are capable of engaging in a hybridised media of moral and economic communication. Finally, it is argued that the idea of a bifurcation between consumers and production rely on a discursive construction that is neither beneficial to the consumers nor to the production side.


The PhD degree was completed at the Department of Agroecology, Aarhus University.
